A true charcuterie ham
Prepared using a selection of 100% French whole pork legs, Le Foué is a delicious cooked ham, hand-moulded the traditional way, drawing on age-old expertise passed on through the generations. Its shape and name are inspired by "fouées", tasty oven-baked round loaves.
By the way: how is a ham made?
The cooked ham (or white ham) that we slice and serve over the counter is made from various muscles ("noix") of a pig's thigh, which are carefully selected, treated during the salting process through brining, tumbled (key stages to preserve and ensure the great taste of the final product), then moulded, respecting the shape of the pig's thigh. The hams are then cooked (some "au torchon” [wrapped in a towel], and others on the bone), and, depending on the recipe, braised or smoked. All these production processes comply with the "Code des Usages de la Charcuterie” (“Charcuterie Use Code”), a rigorous set of specifications guaranteeing conformity with traditional practices and the transmission of traditional expertise.
By the way: how can I properly store my ham?
If you bought a ham at the deli counter, we advise you to keep it cool in the fridge (between 0°C and 4°C) and to consume it within the day or the day after to enjoy its quality and taste. Do not hesitate to seek advice from the staff of your store.
If you purchased a packaged ham, be aware that it can be stored in its original packaging in the fridge between 0°C and 4°C within the « use-by » date indicated on this packaging.
Once the packaging opened, we advise you to use an hermetic box and to consume your ham as soon as possible (notice that the indicated « use-by » date only applies to a product whose packaging has not yet been opened).
